Guiltless Creamy Chicken & Spinach Pasta

This creamy and satisfying recipe uses lighter calorie whipped cream cheese. Although normally used as just a spread, incorporating the fluffy cream cheese into this pasta delivers a rich and creamy taste, without all the guilt of the typical cream sauce.
2 Cups of Cooked Chicken (shredded or chopped into medium chunks)
2 Cups Spinach (I like NewStar Cooking with Spinach)
2 Cloves Garlic (thinly sliced)
¾ Cup Whipped Cream Cheese
1 Tbs EV Olive Oil
Crushed Red Pepper (if desired)
Lots of Black Pepper
Half Box of Whole Wheat Linguine
Cook pasta according to package directions, reserve ¼ cup of cooking water.
Meanwhile, heat olive oil in a large skillet over Medium heat. Add garlic and crushed red pepper and cook for about a minute.
Add spinach, in bunches if necessary, and sprinkle with salt & pepper.
Once spinach is mostly wilted, remove pan from heat and gently stir in cream cheese. Sprinkle with a bit more pepper and reserved cooking water to thicken up the sauce.
Toss in drained pasta noodles and serve.
