Simple Side: Easy Fiesta Rice

If you follow my blog, you already know avocados are one of our household favorites. I was pleased to find that Publix has them on special for $1 this week, so you know I had to stock up.

I wanted to make a mexican side dish, using the perfect avocados I picked up, to compliment the delicious roasted chicken I made over the weekend.
This Fiesta Rice is easy on the wallet and only takes minutes to prepare. It’s a fantastic vegetable rice side dish that goes great with roasted meats, tacos or burritos. Add canned beans, chicken, pork or beef to turn this simple side, into a main dish masterpiece.
(Serves 4)
About a handful of the following:
Frozen Corn (thawed)
Chopped Jalapeno
Chopped Red Onion
Chopped Tomato
2 Avocados (sliced)
1 Cup Rice
1 Tbsp Olive Oil
Palm of Cumin
Salt & Pepper
Lime Wedges (for serving)
Cook rice according to package directions. Once cooked, put into a large mixing bowl. Drizzle with olive oil, just enough to coat the rice, and stir gently.
Season rice with salt, pepper and cumin.
Toss in your chopped ingredients and corn, season with salt & pepper. Stir gently to combine.
Top rice with sliced avocados and serve with lime wedges.
