Easy Egg Fried Rice with Steak

We decided to treat ourselves and picked up some thinly-sliced steak at Publix over the weekend.  We ate half on Sunday night with some sauteed spinach and quick potato salad.  The perfect meal to close out the weekend. I marinated the rest of the steak to have for dinner tonight.

For a simple steak marinade, just use bottled Worchestire sauce.  This magic liquid tenderizes the meat and adds a ton of flavor.  I usually do overnight, but in this case I did 48 hours.  The steak came out so tender, we barely had to chew!  

We actually had Egg Fried Rice for dinner just a few days ago.  It’s such a quick and easy, one-pan recipe that we eat it almost every week.  We love the simple recipe, but it’s so good that it always leaves us wanting more.  So to make it heartier, I cooked up our steak, thinly sliced it, and tossed it into the finished egg fried rice.

To add more flavor, I added a splash of teriyaki sauce and a few drops of sriracha sauce just before serving.  This quick and easy weeknight meal is full of flavor and satisfys even the hungriest husband.  Serve with a side of edamame or a quick Asian-inspired salad with lettuce, carrots and ginger dressing.
