Two Must-Try Slow Cooker Soups

I have two favorite foods:  tacos and pizza.  Lucky for me, my husband shares my obsession with any variation of the two.

But preparing tacos and pizza can sometimes be more work than reward.  For the perfect make-at-home pizza or Taco Tuesday spread, I spend more time prepping and chopping than I do eating!

These two slow-cooker recipes boast all the taco and pizza flavor, but with much less time spent prepping, chopping and cleaning up.  It’s set it and forget it…oh yeah, and eat it all week.  

Slow-Cooker Pizza Soup

16 oz low-sodium or homemade vegetable broth
½ lb crumbled sausage
1 sleeve of packaged pepperoni (halved, I like Hormel Less Fat kind)
24 oz jar of traditional-style pasta sauce
1 small can of sliced black olives (drained well)
1 small jar of mushrooms (drained and rinsed)
1 small green pepper (seeded, chopped)
1 small white onion (chopped)
Pinch of crushed red pepper flakes

1. Cook sausage according to package directions (or try frozen).

2.  Add all ingredients to slow-cooker.

3.  Cook on low for 3-6 hours.

Serve with ideas, try one or some:  Garlic bread, shredded mozzarella, breadsticks, easy side salad of romaine and tomatoes.

Vegetarian Alternative:  Replace sausage and pepperoni for hearty veggies like broccoli or zucchini or MorningStar Farms Grillers Recipe Crumbles.


Slow-Cooker Taco Soup

24 oz low sodium or homemade chicken broth
½ lb ground round
1 can of black beans (drained and rinsed)
1 jar of salsa
1 small can of sliced black olives (drained well)
1 small green pepper (seeded, chopped)
1 small white onion (chopped)
1 jalapeno (chopped, remove membrane and seeds for milder flavor)
1 packet of store bought taco seasoning

1. Brown beef over Medium-high heat, season with salt & pepper.

2.  Add cooked beef, along with all other ingredients to slow-cooker

3.  Cook on low for 3-6 hours.  

Serve with ideas, try one or some: shredded lettuce, cilantro, tortilla chips, sour cream, shredded cheese, chopped red onion.  

Vegetarian Alternative:  Add all ingredients, plus another can of black or pinto beans to crock pot, follow steps 3-4.
